Servings: 6 people
- 2 cups mushrooms diced
- 1 medium onion diced
- 2 tsp minced garlic
- 30 oz chili beans in chili sauce
- 28 oz can diced tomatoes
- 2 cups vegetable broth
- 1/4 tsp chili powder
- 2 tsp cumin
- 2 tsp salt more to taste
- 1/4 tsp pepper
- 8 oz elbow macaroni
- Cheddar cheese as desired
In a skillet at medium heat, saute the mushrooms. I sprinkled mine with worchestershire sauce and a little taco seasoning. After they are cooked, put them in the crock pot bowl.
Add all the rest of the ingredients to the crock pot bowl and mix.
Cover and cook for 4-6 hours on high, or 8-10 hours on low heat.
When there is about 15 minutes of cook time left, add the uncooked macaroni to the crock pot and stir.
When the pasta is done, serve a portion and add cheddar cheese. Mix in the cheese and add whatever toppings you want to the serving; sour cream, greek yogurt, green onions, corn chips, etc. Mix cheese into each serving and not the whole pot for the best cheese consistency.
