
I love to put a side of rice with my Enchiladas. This is a great recipe to basically set to make itself while you’re getting dinner ready. Make as spicy as you want it by adding more chili powder or spicy salsa before you set it to cook.


Rice Cooker Spanish Rice
The perfect addition to enchiladas, burritos, or tamales. This rice is easy and fast! It doubles fine, so you can make enough for tomorrow!

Ingredients
- 2 cups uncooked rice
- 1 14 oz can diced tomatoes with juice or tomato sauce
- 3 1/2 cups water
- 1 small onion chopped fine
- 3 bullion cubes chicken
- 3 Tbsp Chili powder
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp garlic powder
Instructions
- Put all the ingredients in the rice cooker, stir is up, and start the machine. Check occasionally to stir and check that is has enough liquid. Add more water if it looks too dry.
