Use your crock pot to make this delicious vegetarian mushroom chili mac. The mushroom replaces meat, and the spice level is easy to adjust for your crowd. Pair it with cornbread and salad for a complete dinner.

My husband is vegetarian, but the rest of the family isn’t, so usually we cook what we want and just leave some without meat for him. This recipe however, is completely vegetarian and so delicious, no one misses the meat.

I use mushrooms to give the chili the mouthfeel of having meat. It’s not exactly the same, but it’s pretty close. I saute it in a cast iron skillet with some worchestershire sauce and a little taco seasoning. I cooked it until it had cooked down, then dumped it in to the crock pot.

When there is about 15 minutes left of cook time, add the macaroni, uncooked, to the pot and stir it up. It’ll be all cooked when the timer goes off! When you serve it, add some cheddar cheese and mix it up, then top it with corn chips or sour cream or Greek yogurt.

Add everything else and let it cook! Everyone in the house loved this dish, the kids didn’t notice it had mushrooms or onions.

This chili is made in the crock pot and uses mushrooms instead of meat, it also adds macaroni to make it nearly a one-pot meal.

Ingredients
  

  • 2 cups mushrooms diced
  • 1 medium onion diced
  • 2 tsp minced garlic
  • 30 oz chili beans in chili sauce
  • 28 oz can diced tomatoes
  • 2 cups vegetable broth
  • 1/4 tsp chili powder
  • 2 tsp cumin
  • 2 tsp salt more to taste
  • 1/4 tsp pepper
  • 8 oz elbow macaroni
  • Cheddar cheese as desired

Instructions
 

  • In a skillet at medium heat, saute the mushrooms.  I sprinkled mine with worchestershire sauce and a little taco seasoning.  After they are cooked, put them in the crock pot bowl.
  • Add all the rest of the ingredients to the crock pot bowl and mix.
  • Cover and cook for 4-6 hours on high, or 8-10 hours on low heat.
  • When there is about 15 minutes of cook time left, add the uncooked macaroni to the crock pot and stir.
  • When the pasta is done, serve a portion and add cheddar cheese.  Mix in the cheese and add whatever toppings you want to the serving; sour cream, greek yogurt, green onions, corn chips, etc.  Mix cheese into each serving and not the whole pot for the best cheese consistency.
